Green Eggs

This is a simple way to incorporate greens into your food! Add a bit of olive oil to the pan, add "deep greens," like baby spinach, kale, and arugula, crack 2 eggs over it, add chives, salt and pepper and let it cook slowly over low heat. You can eat as is or make a sandwich out of it. Either way this is yummy!
