This is a simple way to incorporate greens into your food! Add a bit of olive oil to the pan, add "deep greens," like baby spinach, kale, and arugula, crack 2 eggs over it, add chives, salt and pepper and let it cook slowly over low heat. You can eat as is or make a sandwich out of it. Either way this is yummy!
These are seriously good eats! I first spotted these HERE and just had to try them. They were truly delicious. Then a few days later, I followed up on the general idea here and made sour cream, chive, and butter mashed potatoes (and have made them two more times since) and it was super tasty! Perfect food to warm up these cold February days.
