Juicing & the Spring Garden

I am so happy to be juicing again! And no, I don't have a fancy juicer (I've had two and both broke), so I found the sure proof, inexpensive way to continue drinking my favorite fresh juices!

The juice pictured here is a carrot (3), orange (2), and ginger (1 medium-sized piece), prepared in my trusty blender! 

The other day, I was actually feeling like a cold might be on-coming, but I prepared this juice and drank it first thing in the morning and voilá my cold symptoms disappeared. 

What to do?
Peel and cut the carrots and put the pieces in the blender, do the same with the ginger (you can also add the oranges at this stage), add 1 to 2 cups of water (as needed) and blend away (see picture below).  When all the piece are blended into a pulp, use a fine mesh sieve to strain the carrot and ginger juice (see the next photo, make sure to thoroughly flatten the pulp so that you strain all the juice off of it). If you did not blend in the oranges, at this stage you can squeeze the orange juice directly into the carrot and ginger juice and you are ready to drink fresh juice! Fresh juice is best when you drink it immediately (also I avoid ice so as to not water down the juice).
This spring is been fun to watch the garden grow in again. After last winter's intensity, it is was hard for me to image what the garden might look like this year. But as always, the plants in the garden remind me of the resiliency of life and the beauty of nature. I can just hang out in the garden all day looking at the plants and be completely content!
