as easy as triple berry pie

I'm obsessed with this pie right now! It is so so so good! And it is super easy and healthy too!

What you'll need for pie filling:
-A store bought or home made 9 inch pie crust
-3 cups of frozen or fresh fruit (I use blueberry, strawberry and raspberry)
(also, be sure to cut the strawberries into small pieces)
-1/2 tablespoon lemon juice
-1/4 cup corn starch
-1/2 cup granulated sugar
-1/2 teaspoon ground cinnamon
-1/2 teaspoon vanilla extract

What you'll need for the pie's granola crust:
-1 cup old fashioned oats
-1/3 cup walnuts (toasted and crushed)
-1/3 cup almonds (toasted and crushed)
-1 tablespoon ground flax (optional)
-1/4 teaspoon ground cinnamon
-1/2 stick of butter cut into small pieces

What to do:
Pre-heat oven to 375 degrees.
If the fruit is frozen take it out and let it thaw for at least 30 minutes. Mix together the corn starch and the sugar and add 1 tablespoon of this mixture to the bottom of the pie dish (it keeps it from getting soggy). Add the lemon juice to the fruit then add the rest of the corn starch and sugar mix, vanilla and cinnamon. Add the fruit to the pie dish. To make the granola, place the old fashion oats in a bowl and make sure to toast the almonds and walnuts in a pan before adding it to the oats, add the flax, cinnamon and butter and gently toss together. Then add the granola topping to the pie -- press it down so that it is flat and covers all of the fruit. Put the pie dish on a cookie sheet and cover the edges with a pie ring or just with aluminum foil (to keep edges from burning). Put the cookie sheet (with the pie on it) in the oven for 1 hour. Enjoy warm or cold!
