A fall favorite: the fruit crisp!

As the weather cools and apples are plentiful, I start craving the warm comfort of an apple crisp (yummy!). I make a variation on the crisp using a combination of nuts, grains, and fruit. The other day I made an apple, coconut, and almond crisp that tasted heavenly. And yesterday, I made a peach, blueberry, and strawberry crisp and added walnuts and almonds. Here is my basic recipe and you can add whatever you have on hand.

What you'll need:
Fruit (apples, peaches, blueberries, strawberries, rapsberries)
Fresh lime juice (1 tablespoon)
Vanilla extract (1 teaspoon)
Cinnamon (1 tablespoon) 
Old fashion oats  (1 cup)
Whole wheat flour (1/2 cup)
Butter 6 tablespoons (1/3 of a stick of butter)
Brown sugar (1/3 cup)
Pinch of salt
Walnuts (1/3 cup, toasted)
Almonds (1/3 cup, toasted)
Coconut flakes (1/3 cup, toasted)
(to toast these just place them in a small pot over medium heat for about 1 to 2 minutes, careful not to burn them)
 
What to do?
Pre-heat oven to 375 degrees
For apple crisp
Peel and cut up the fruit (4 apples) and toss in a bowl, add lime juice, sugar and vanilla extract
Butter the pan and add the apple mix
In another bowl, add the oats, flour, nuts (you might want to pulvorize nuts before adding them, I use a pestle smash them just a bit), cinnamon, and salt, then cut butter into pieces and add to the dry mix
Pour dry mixture over the apples (make sure the mixture covers the entire surface)
Bake for 40 minutes and enjoy warm 

Other fruits 
I also like to make this using peaches (cut up two large peaches), add blueberries, strawberries or raspberries (your fruit can be fresh or frozen). And follow the same procedure as for the apples explained above.
