Sugarless Banana Breakfast Muffins

These make a quick and wonderful breakfast treat! The recipe I share here make half a dozen muffins, you can double or triple the recipe to yield a larger batch.

Ingredients
-1 cup all-purpose flour
-1 tspn baking soda
-1/4 teaspoon salt
-1 Tblspn wheat-germ
-2 Tblspn canola oil
-2 Tblspn honey
-1 egg
-1 ripe banana (you can substitute bananas for 1/2 cup blueberries)
-3 Tblspn hot water

What to do?
-Pre-heat oven to 325 degrees 
-Add dry ingredients, then stir together
-Add honey, egg, and oil and beat together
-Add (mashed) banana to honey, egg, and oil mix and combine gently.
-Add wet ingredients to dry mix; combine together well, but do not over mix!
 -Butter muffin pan, add the mixture to pan. 
 -Put in oven for 15 minutes until golden brown (or until toothpick or knife comes out clean).
